I would recommend dovecot.   IMAP servers in general have a scary
security history, but dovecot does not.

But as others said, Maildir is a nice format; I have postfix deliver to
procmail (would use sieve if starting over; it didn't exist back when I
was young) which sorts mail into multiple directories under ~/IMAP (so
inbox on the phone/whatever does not have list mail or tagged spam).
