I'd do a vanilla amd64 build and try that.  I have the impression it
works.

Long ago (4.0?), there was a multi-arch image that had about 8
architectures (something like i386, amd64, sparc, sparc64, macppc,
alpha, ?), and something in the boot process found the right bootloader
and kernel for each one.

It is surely easier to have two separate cds.  I wouldn't try to run
i386 userland with an amd64 kernel even though it might work; it seems
like asking for trouble.
