From my point and view i would recommend EXIM because it is easy to configure
with default / howto setups and does this all "out of the box".

To configure your spoolt transport to gmail or other "smar hosts" you may look
for "exim smarthost config" or "exim satellite host config" in search engines
to get a basic configuration - you just have to fit the smtp host name and
authentication credentials within the config for your needs.

Fetching mails from outer mail POPs by POP3 or IMAP could be easily done by
"fetchmail" which feeds incoming mails directly to your local exim / MDA / LDA
by default.

Good luck!
