Because you want to separate the building activity from the installing
activity. If something goes wrong while building, you don't want to be
stuck with a broken system.

I think that's a bad example, because at the moment nobody wants to have
the latest Firefox...

Since the binaries are built from the quarterly branches, I suppose that
is to be expected.
