Any reason we shouldn't fetch the latest config.sub and config.guess and update all of them in pkgsrc?

The only ones that should be used are the mk/gnu-config copies, and they were updated last year to include support for aarch64eb, so for some reason config-{guess,sub}-override targets aren't taking effect.
