Hi Julian,
I run two wikis on my server - Mediawiki is a good choice for my demands
( http://650wiki.org ) and probably not what you are looking for.

Just some input about maintenance. I had and still have some quite
annoying experience with spammers. Lots of junk gets dumped, automated
dummy user registration and things like that. It requires continous
attention. I also tried to get some people for maintaining the wikis,
but often they loose interest and it remains my duty to care for it.
Such projects go on for many years (at least mine).

Whatever software you choose - try to get some solution what requires a
minimum of care. If the content increases it requires lots of time to
watch it.
