Ultimately, installing a small boot disk for the primary, and using the 6TB as a second drive worked out the best.

I must say, setting up the 2nd drive set with GPT was quite easy, went extremely smoothly.

Not quite - if you have the GPT partitions setup, you can use the 8.0 sysinst
and let it install into the already prepared root partition. If you want a more
complex partition layout, you will need to make manual changes later.
