...just to avoid typical misunderstandings for "newbies": XenServer is NOT
Xen. XenServer is a (proprietary) "ready to run" Virtualization environment
which "uses" Xen.

Xen byself is Open Source  and NetBSD/Xen as "Hypervisor" / Dom0 is a Open
Source implementation of Xen.

XenServer is Open Source too. It uses a different, and more capable, toolstack (xapi) to the traditional xentools toolstack.

It is tied to a Linux dom0 though, but you can even take an off-the-shelf CentOS install and add the relevant packages to make it XenServer-ish.
