you may talk about uw-imap, a real security mess over years and (may be) some 
some others. Dovecot has nearly no history compared to them...

Otherwise this is just crap...

For cyrus this is fairly incorrect so far, as it is under highly and hard usage 
within many large and well know email isp networks. So it should be reliable 
and secure enough for most applications. I did not know any larger ISP running 
dovecot so far, as it targets "smaller" applications and/or networks.

But without deeper knowledge of email and internet technologies no of that 
solutions can provide you ultimate security, nor dovecot, cyrus or even uw.
