So what's the recommended way of handling my problem in the real world?
Do I really have to delete ~ALL my packages from the (production) system and 
then re-install the top ones in order to keep the AUTOMATIC state intact?

I know apt can handle this. If dpkg can't (I don't know whether it can or not), 
how does apt manage the intermediate state?
