Largely anywhere you like. See "man man" and in particular
for this, the section on MANPATH (and maybe man.conf(5) if your
man pages aren't just intended for personal use, or close to it).
To be sane, you should certainly copy the standard man1/man2/... hierarchy
inside some directory or oher.
