I'm a bit surprised the man page says that.  I can see:

sbin/mount/mount.c:243
    /* ignore the fstab file options.  */
    fs->fs_mntops = NULL;

that has been there for decades.  I guess I sort of always
unconsciously assumed that, b/c that seems like the right thing for -u
to do.
