From the nouveau(4) man-page:

   Option "GLXVBlank" "boolean"
      Synchronize GLX clients to VBlank. Useful  where  tearing is  a
      problem,  harmful  if  the GPU isn't fast enough to keep up with
      the monitor refresh rate. Default: on.

There is also: Option "PageFlip" "boolean"

Both of those default to "on" according to the man-page, but, man-pages
sometimes lie. Turn them on explicitly and see if it makes any difference.
