quite similar to my system, exept I use the embeeded ahci disk controller.

Could you try a GENERIC+DEBUG+DIAGNOSTIC and see if it works ?
XEN3_DOM0 is built with DEBUG+DIAGNOSTIC, which may make a difference
for panics ...
