Note that you probably didn't need tex-metafont as it was only trying to
use it because of the lack of ecrm1000.tfm

Quite possibly, but only if also missing in texlive as we typically
start with the dependencies specified in the texlive package and add
others that we notice.   So what package was it that was trying to use ec?
