It is intended for large files, slow systems, large quantities of files, etc.
I quite often move large disk images (4GB - 100GB each) across raids
and just leave the mv / cp / etc operations running in a screen that I
am watching, but without progress, it can be quite boring and
uninformative (should there be a bottleneck of some sort.) I know dd
can provide this, but not for multiple files and trees.

What part of cvs are you referring to? From my experience cvs is
relatively verbose in what it is doing, (when compared to something
like cp.)
