Some obvious sysctl variables under net.inet:

net.inet.ip.ttl = 64
net.inet.tcp.recvspace = 16384
net.inet.tcp.mssdflt = 512

The MTU is set on a per-interface basis with ifconfig <if> mtu <mtu>.
