Depending on how much you care about using original-era parts, you
could go with a SCSI<->SATA adapter plus a modern disk (or SSD, if you
want really low acoustic noise).  My main desktop machine is currently
running off such an adapter plus a "1TB" laptop-formfactor drive
(Seagate ST1000LM048):
