I'd go for an AGP G4, that gives you 64bit PCI slots, on later models 
also gigabit ethernet.
And of course the option to use way faster CPUs.
Since they start at 350 or 400MHz they should be fairly cheap these 
days as well.

I don't see a real reason why you shouldn't - we have mostly decent 
support for most hardware ( well, as long as you don't want AirPort 
Extreme, and there's no accelerated wsdisplay driver for nvidia chips ) 
and NetBSD lives happily in an Apple UFS partition.
The latest PowerBooks have some weird problems though, apparently 
firmware-related, but there are ways around that. Problem is that I 
can't reproduce any of those problems on my iBook G4 ( it just works 
fine ) so there's little I can do right now unless someone feels like 
throwing a latest generation *Book my way ;)
