Well, you could boot the CD, mount / from the harddisk, set up 
networking and ssh and compile stuff via ssh. Not the nice way though. 
I guess comparing the kernel configs for GENERIC and INSTALL should 
shed some light on this.

You could also try one of my iBook Kernels, they /should/ work on the 
mini...
