Cool.

I ftp'd everything down, then put it on a Zip disk, which I could then
either (1) attach to my NetBSD target machine, or (2) mount on my PPC
machine and access by AppleShare from the NetBSD target.

Well, it depends on what you are installing and running. X-Windows takes
up RAM, so don't run an X server if you are low on it. The X clients also
take RAM, and the X packages take up significant disk space on a smaller
hard drive. A simple print server or whatever can be pretty minimally
configured - no X and other accoutrements.

No idea. Other than comparing bus speeds, networkability, and
video-access speeds (if you will be doing much video), I can't say.

The DNS can be done with light use of disk and RAM resources. The WWWeb
server is probably simpler to start with. The WWWeb server might need
more packages (Perl, Lynx, etc.) to be comfortable to use, and even more
(Gimp, etc.) if you plan to use the console and X-Windows.

Hope this helps.
