The same thing happened to me with a HP9000/375. Anyway what I did to get
the system wait until I chose the option I wanted was:

1. Turn the drive the system usually boots from off.
2. Turn the system on. Hit the space bar as usual.
3. When the menu appears turn the system off.
4. Turn the drive the system usually boots from on.
5. Turn the system on, hitting the space bar, now the menu should appear
and the system wait until you type the option you want.
