Where is it documented that loadbsd boots per default in single-user
mode, and that the bootup with the Bootmenu uses the multi-user mode?

Are there other differences in behaviour between loadbsd and the
bootup with the Bootmenu?

BTW, what is the symbol table in:
"-S  Include kernel symbol table."
