Getting a tcpdump of the packets between the two machine would be good too -
i.e. on the server:

tcpdump -i <network interface on the shared subnet with the client> -s 1500
- -nw nfs.problems.dump host <ip of the linux client>

e.g.:

tcpdump -i fxp0 -s 1500 -nw nfs.problems.dump host 10.0.0.42
