My Xen domUs send outgoing mail with pkgsrc/mail/mini_sendmail.  I
install it into a separate location by setting LOCALBASE and PKG_DBDIR
so that pkgsrc bulk builds don't de-install or overwrite it. I used to
use chroots for pkgsrc bulk builds using the same method.
