What kind of link is this over?  Wired Ethernet or Wireless?

I had terrible trouble with my wireless stuff and NFS.  The read and write 
block sizes needed to be set low: 2k or 4k for NFS to work reliably.  Very 
similar stuff to what you describe, although yours seems a bit worse.
