You can.  That, in fact, is what I do in my home network.  I have one
computer (hermes) with GhostScript set up in a printer-filter, and
when the others print they normally print to the "ps" (PostScript)
printcap entry on hermes, via lpr.

One problem is that you seemed to be doing the filtering twice, as someone
pointed out.  It's not that the client has to do it, it's that when the
client does it, too, then the printer server probably isn't getting PostScript
anymore...
