for smtp the netbsd-provided sendmail or postfix would be fine.

i wrote a little howto for sendmail on openbsd that you can find at
http://naughty.monkey.org/openbsd/archive/misc/0204/msg00846.html .  it will
still be of use under netbsd.

for a small and secure pop3 daemon, check out popa3d in pkgsrc
