macbugs has a 'log' command which will dump the output to a text file,
this can help helpful for small things.

'macnosy' is good for full blown reverse engineering.  I used it ages
ago (like 5 years).  it had a real crufty UI but once you learned it, it
was an amazing swiss army knife.
