Do you have positive confirmation that UAE emulates the MMU, too, ... 
and _which_ mmu? (the 68851, the mmu on the 68030, 68040 or 68060 chip)

Yes. Todd Vierling (tv@netbsd.org) will happily accept your help, if you're
serious about this, to make the new gas ready for NetBSD/m68k.

Read the tech-toolchain archive first, to find out about the problems to
solve, please (this way I dont need to remember them exactly and type them
in).

No. If at all, there will be a full NetBSD/amigappc. Actually, work is on
