earthstar.com for instance will always have the From: header set to
something @earthstar.com.  earthstar.com is purely a spam engine, and
therefore it should be pretty safe to just weed that particular domain
out when it shows up in From: headers or Reply-To: headers.

They use MCImail for their relay, but that doesn't show up in any of
those headers.
