See /usr/share/mk/bsd.own.mk, and search for MKPOSTFIX. These are the variables that can be set in /etc/mk.conf to not build parts of the tree. It's arguably a bug that there is no MKGAMES. Note that you can cross-build for sparc from i386/amd64 (or vax, but that's probably not helpful).
