Why wasn't this done the other way around?  I.e., keep thunderbird built against
gtk2 and provide thunderbird-gtk1?  Maybe the reason was consistency with
mozilla-gtk2?

IMVHO, packages using the most reasonable base name (thunderbird in this case)
should be the most up to date (including dependencies).  If you want something
"old", then you go for packages with different names than what you could expect.
