Hmmmm I think both to YES could be better.  If you start compiling lots of
programs because you want a full gnome desktop, and then you note you missed
to set USE_ESOUND=YES... then you have to rebuild everything (and this will
happen to lots of newcomers).  Instead, if you don't know about the option,
you will have some extra deps... but not too big.

People who know what they are really doing will be able to disable support
easily.
