I'm seeing this too.

xenkernel3-3.1.0    Xen3 Kernel
xentools3-3.1.0     Userland Tools for Xen

Latest domU kernel seems fine. I have reverted my dom0 to:

NetBSD gogeta.internal 4.99.21 NetBSD 4.99.21 (XEN3_DOM0) #0: Fri Jun 29 
19:41:28 EST 2007 

I tested all kernels available via daily HEAD and all resulted in the reboot 
post hypervisor init and pre kernel boot.

The initial kernel I tested was approx. a week old.

One optimistic result is that the domU zombies have disappeared.

With nothing appearing on screen passed the hypervisor init ... I can only 
imagine it's either kernel or xen+kernel incompatibility. As Manuel is not 
seeing this problem, maybe there's a xen update?
