That was the suspected issue. I started to see random intermittent delays that coincided with ethernet error counter activity on the twisted pair link between the late-90s-vintage hub with the coax interface and the modern switch that the NFS server was running on, so I decided to switch to the AUI interface and go directly to the modern switch until I had time to tear everything apart and test to find the source of the issue.
