ClarisWork (prior to AppleWorks v6)
Black Knight
MacLayers

to name a few.  There are a bunch of much older programs still around if 
you need to come in from something like a MacPlus, although Zterm and 
MacLayers have the ability to run from a Plus and emulate the ESC key - 
necessary for serious "vi" users.
