Well, I don't know about your other question; I imagine there is a 
way to remount / read-write so you can change fstab, but I don't know 
how to do it.

Anyway, in 1.5 it appears that many .conf files have had their 
contents moved to /etc/default(s?). If you want to override anything, 
you can just add it to the file in /etc.

I guess the advantage is that when you upgrade to an new system, you 
can just copy your old .conf files over so that you don't have to 
mess with defaults. (Did that make any sense?)
