The problem then is probably with how we are (mis)handling setting up the
virtual memroy support & mappings for the video memory.

If you boot with millions of colors, MacOS probably reserves more video
memory than it does when you boot with just 256 colors. And that different
amount of video memory is what's tripping the system up.
