Just letting it autodetect should work... I think it ends up finding
"m68k-apple-netbsd". After the configure script is done, it'll say
something about using some HP 9000 machine definition file. Don't worry
about that :)

If you don't have X installed, it shouldn't try to compile X support in. 
If you do have X, but don't want the X stuff in your emacs, there's some
option you can pass to configure... try configure --help or something. I
think it's configure --without-x11, but I'm not sure about that.
