I _know_ this one is in the FAQ:

Whenever you boot single-user, the root file system is the only one
mounted, and it is mounted read-only.  You can update its status to
read-write with the command

    mount -u /

And you can mount other file systems, if any, using

    mount -a

(Of course, that only works if /etc/fstab is set up correctly.)
