If you are connecting two computers near each other, it should work.
But the technote was probably covering the case where you have bad
ground loops and such. In that case, the isolation in LocalTalk would
help.

Note: don't forget some printers figure out if there's a computer on
the other end of the line, so if you use a printer cable, you won't
be able to use LocalTalk to that printer using a printer cable. Duh.
