It looked like he was using pine to send mail, so 
from the main menu, he should choose Setup,  then Config, then find 
the 'customized-hdrs' line and type A to add a value. In there type in the 
lines:

	Reply-To: my@real.email.address

then you are done! Another good thing to do is to also add

	Errors-To: my@real.email.address

so that any bounces or mail problems come back to you anyway.
