Yes. One system I have here has 12 of them (and could get more, as most
of them needs very litte ressources: dhcp or vmps servers, nagios
monitoring, a backup DNS server, etc, ..)

I think so. Using 6 extra MB per domU would means 72MB overhead on this box.
The size of one or two domUs :)
