You can configure VMware to ignore its memory limits.  Start it, then choose 
"Settings" from the tool bar and select "Reserved Memory".  The dialog box 
that pops up will tell you a lot of stuff about memory usage (mostly targeted 
at folks who haven't hacked on OSes :-) ) and has an "Enable memory limits" 
checkbox.  Uncheck it, shut VMware down and start it back up.  Reserved 
memory shouldn't be an issue for you any more.  Of course, performance may 
suffer, but that's just a paging/swapping/etc. problem like in any virtual 
memory environment.
