Greywolf <greywolf@starwolf.com> suggested a solution to my woes:

> Make sure you start X with -depth 16 or -depth 24; 8-bit is horrid

"-bpp 32" solved the problem.  *Many* thanks for pointing me in the
right direction!

> Run xf86config.  You'll thank yourself for it in the morning.

I did that first, and got a few extra modes our of it, but otherwise
it did not address the problem.  It looks as though the depth was the
ticket.
