Change resolutions on Raspberry Pi?

Hi,

Can someone tell me an easy way to change the console (not X) resolution 
of a Raspberry Pi? I'd like to use the composite output, but 1280x720 
makes the text too small. 640x480 should be usable, I'm guessing.
