There are i386 boxes with more than 1 ioapic, certainly. High-end
boards often have that. I have tested the amd64 port on a machine
with 4 CPUs, 16G of memory and multiple ioapics.. it didn't show
any problems.

I have a dual CPU machine with multiple ioapics myself. I haven't
upgraded it for a while. I'll plug in a PCI-X Adaptec 7902 controller
to test.
