I'm afraid of the side-effects this option can cause.  Can you guarantee that
a librsvg2 built with the gnome option and one built without it provide the
exact same API?  If not, packages relying on librsvg2 may misteriously not
work at all if the incorrect option was used to build the binary package.

Plus, as usual, an option does not let a binary-only user choose what he
wants in his system.  Aaah yeah, the "joys" of build-time options.

I'd much rather see a librsvg2-gnome package and a librsvg2 one (without
gnome support) or something similar.  This way, other packages can properly
specify what they need and binary-only users have a choice.
