Dan,
I would suggest either your first or second options. I've done both
with NetBSD. Fortunately, dns servers don't typically (in my own
experience) change too often so manually dealing with the updates
won't be much of a burden. A caching dns server works great, I use one
on this system I am using right now and the setup is trivial and as
you said well described in the docs.
